Freezer Taco Meat
Seasoned ground beef ready for tacos, nachos, or burritos — brown once, freeze in portions, and dinner is halfway done.
Ingredients (makes about 4–5 freezer bags)
* 3 lbs ground beef
* 1 large onion, finely diced
* 3 tablespoons taco seasoning (or to taste)
* 1 teaspoon garlic powder
* 1 teaspoon salt
* ½ teaspoon cumin
* ½ cup water or beef broth
Instructions
1. Brown the ground beef with the onion until fully cooked. Drain excess grease.
2. Stir in the taco seasoning, garlic powder, salt, cumin, and water. Simmer 5 minutes.
3. Cool completely.
4. Portion into freezer bags (about 2–3 cups each). Label and freeze flat.
To use
Thaw overnight or reheat from frozen with a splash of water.
Ready for tacos in minutes.

Creamy Garlic Shrimp Pasta

  • ▢8 ounces (225 grams) linguine pasta
  • ▢1 tablespoon olive oil
  • ▢1 ½ tablespoons butter divided
  • ▢1 pound (450 grams) raw shrimp buy frozen, peeled, and deveined shrimp
  • ▢½ teaspoon salt
  • ▢¼ teaspoon ground black pepper
  • ▢1 tablespoon Old bay seasoning optional – or smoked paprika or cajun
  • ▢1 clove garlic minced
  • ▢½ cup (120 ml) heavy cream (double cream in the UK)
  • ▢½ cup (40 grams) parmesan cheese grated
  • ▢¼ cup chopped fresh parsley chopped
Instructions 
  • In a medium-sized saucepan, boil water and salt it. Add your pasta, and cook according to the package instructions until al dente. When the pasta is cooked, reserve 1 cup of the pasta water and drain the pasta.
  • In a skillet over medium heat, melt 1 tablespoon of the butter, and add olive oil. Cook the shrimp for a minute, then season with salt, pepper, and Old Bay Seasoning or paprika if using.
  • Continue to cook the shrimp until it’s pink. Do this in batches if you’re worried that you may overcook the shrimp. Remove the shrimp onto a plate and set aside.
  • In the same pan, melt the remaining butter and add garlic, cook for 30 seconds or until it's fragrant. Add the heavy cream, and with the spatula deglaze the pan.
  • Add parmesan, let it melt then loosen the sauce with reserved pasta water and allow to simmer for a minute. Taste the sauce and see if more salt and pepper is needed.
  • Toss the pasta with the sauce until it’s well coated. Add the shrimp back in to reheat it gently, garnish with freshly chopped parsley and serve.
Notes:
  • If you cook the shrimp from frozen, you will have liquid coming out and that’s fine as it will take about a minute to simmer it down (not enough to overcook the shrimp). If possible, thaw the shrimp before cooking.
  • Don’t forget to reserve about a cup of the pasta cooking water, it’s quite starchy and great for loosening up the sauce. You will most probably need much less than a cup, but to stay on the safe side I always reserve 1 cup and drain the rest.
This pasta makes 4 normal servings, or 3 big ones.
  • Store in the fridge in a sealed container for up to 3 days.
  • Reheat the pasta in a skillet over low-medium heat, and add a splash of water to loosen the sauce. Do the same if using the microwave. I don’t recommend freezing this creamy shrimp pasta.

6 Chicken Marinades
1. Hot Honey Chicken Marinade
For: 1½ lb (680 g) chicken breast
Ingredients
* ¼ cup (85 g) honey
* 2 tbsp (30 ml) olive oil
* 2 tbsp (30 ml) hot sauce
* 1 tbsp (15 ml) apple cider vinegar
* 3 garlic cloves, minced
* 1 tsp smoked paprika
* ½ tsp chili flakes
* ¾ tsp salt
* ¼ tsp black pepper
Method
1. Whisk all the ingredients together.
2. Place the chicken in a ziplock bag.
3. Pour the marinade over the chicken and coat well.
4. Refrigerate for 30 minutes to 4 hours.
5. Remove the chicken and discard the used marinade.
6. Cook in a skillet over medium heat for 5–7 minutes per side, or bake at 425°F (220°C) for 18–24 minutes.
7. Cook until the internal temperature reaches 165°F (74°C).
8. Rest for 5 minutes before slicing.
2. Garlic Parmesan Chicken Marinade
For: 1½ lb (680 g) chicken breast
Ingredients
* ¼ cup (60 ml) olive oil
* ⅓ cup (35 g) grated Parmesan
* 4 garlic cloves, minced
* 2 tbsp (30 ml) fresh lemon juice
* 1 tsp Italian seasoning
* ½ tsp onion powder
* ¾ tsp salt
* ½ tsp black pepper
Method
1. Mix olive oil, Parmesan, garlic, lemon juice and seasonings.
2. Add chicken and coat thoroughly.
3. Cover and refrigerate for 30 minutes to 4 hours.
4. Bake at 425°F (220°C) for 18–24 minutes or cook in a skillet for 5–7 minutes per side.
5. Cook until the chicken reaches 165°F (74°C).
6. Rest for 5 minutes before serving.
3. Cajun Garlic Chicken Marinade
For: 1½ lb (680 g) chicken breast
Ingredients
* ¼ cup (60 ml) olive oil
* 1 tbsp (15 ml) fresh lemon juice
* 4 garlic cloves, minced
* 2 tsp Cajun seasoning
* 1 tsp smoked paprika
* ½ tsp dried oregano
* ¼ tsp cayenne pepper, optional
* ½ tsp black pepper
* ½ tsp salt
Method
1. Whisk all ingredients together.
2. Add chicken and coat evenly.
3. Refrigerate for 30 minutes to 6 hours.
4. Remove excess marinade.
5. Grill or cook in a skillet over medium-high heat for about 5–7 minutes per side.
6. Cook until the center reaches 165°F (74°C).
7. Rest for 5 minutes before slicing.
4. Greek Lemon Herb Chicken Marinade
For: 1½ lb (680 g) chicken breast
Ingredients
* ½ cup (120 g) plain Greek yogurt
* 2 tbsp (30 ml) olive oil
* 2 tbsp (30 ml) fresh lemon juice
* 1 tsp lemon zest
* 4 garlic cloves, minced
* 1½ tsp dried oregano
* ½ tsp dried thyme
* 1 tsp salt
* ½ tsp black pepper
Method
1. Whisk yogurt, olive oil, lemon juice, zest, garlic and seasonings.
2. Add chicken and coat completely.
3. Refrigerate for 1–8 hours.
4. Remove excess marinade.
5. Bake at 425°F (220°C) for 18–24 minutes or grill for 5–7 minutes per side.
6. Cook until the chicken reaches 165°F (74°C).
7. Rest for 5 minutes before slicing.
5. Smoky BBQ Chicken Marinade
For: 1½ lb (680 g) chicken breast
Ingredients
* ½ cup (120 g) BBQ sauce
* 2 tbsp (30 ml) olive oil
* 1 tbsp (15 ml) apple cider vinegar
* 1 tbsp (13 g) brown sugar
* 1 tsp smoked paprika
* ½ tsp garlic powder
* ½ tsp onion powder
* ¼ tsp black pepper
* ¼ tsp salt
Method
1. Whisk BBQ sauce, olive oil, vinegar, brown sugar and seasonings.
2. Add chicken and coat completely.
3. Refrigerate for 30 minutes to 6 hours.
4. Remove the chicken and let excess marinade drip off.
5. Bake at 425°F (220°C) for 18–24 minutes or grill for 5–7 minutes per side.
6. Cook until the internal temperature reaches 165°F (74°C).
7. For extra flavor, brush with fresh BBQ sauce during the last 2–3 minutes.
6. Honey Mustard Chicken Marinade
For: 1½ lb (680 g) chicken breast
Ingredients
* ¼ cup (60 g) Dijon mustard
* 3 tbsp (64 g) honey
* 2 tbsp (30 ml) olive oil
* 1 tbsp (15 ml) apple cider vinegar
* 2 garlic cloves, minced
* ½ tsp smoked paprika
* ½ tsp salt
* ¼ tsp black pepper
Method
1. Whisk Dijon mustard, honey, olive oil, vinegar, garlic and seasonings until smooth.
2. Add chicken and coat well.
3. Refrigerate for 30 minutes to 6 hours.
4. Remove chicken and discard the used marinade.
5. Cook in a skillet over medium heat for 5–7 minutes per side, or bake at 425°F (220°C) for 18–24 minutes.
6. Cook until the thickest part reaches 165°F (74°C).
7. Rest for 5 minutes before slicing.

Pizza Burgers

Ingredients:

1 pound ground beef

1/2 cup pizza sauce

1/4 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

4 slices mozzarella cheese

4 hamburger buns

Optional toppings: sliced pepperoni, mushrooms, bell peppers, onions

Directions:

In a bowl, mix together the ground beef, Parmesan cheese, Italian seasoning, and garlic powder. Form into 4 patties.

Cook the patties in a skillet over medium heat, or grill them, until they are browned and cooked to your desired level of doneness.

Spoon pizza sauce over each patty, then top with mozzarella cheese and any other toppings you like.

Cover the skillet or close the grill lid and cook until the cheese is melted.

BBQ Chicken Sandwiches

1/2 cup chopped onion

1/2 cup diced celery

1 garlic clove, minced

1 tablespoon butter

1/2 cup salsa

1/2 cup ketchup

2 tablespoons brown sugar

2 tablespoons cider vinegar

1 tablespoon Worcestershire sauce

1/2 teaspoon chili powder

1/4 teaspoon salt

1/8 teaspoon pepper

2 cups shredded cooked chicken

6 hamburger buns, split and toasted

In a large saucepan, sauté the onion, celery and garlic in butter until tender. Stir in the salsa, ketchup, brown sugar, vinegar, Worcestershire sauce, chili powder, salt and pepper.

Stir in chicken. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. Serve about 1/3 cup chicken mixture on each bun.
